Saucy Mozzarella Chicken

It never hurts to have plenty of chicken recipes…especially when they taste as good as this one does!

It’s basically common knowledge that everyone loves the combination of tomato sauce and melted cheese on top. Well, this tomato sauce is special, and takes the recipe to a whole new level!

You can serve this chicken on a bed of pasta, or even just with a side of veggies. Either way, it’s going to be delicious.


Ingredients:

  • 3 Small chicken breasts
  • 1 Tbsp Olive oil
  • 1 Tbsp Minced garlic
  • 1/2 CUP Chopped onions
  • 1 14 oz can crushed tomatoes
  • 1/2 tsp Italian seasoning
  • 1/2 tsp Red pepper flakes
  • 1/4 tsp Dried basil
  • 1 Tbsp Sun-dried tomato pesto
  • Salt and pepper + ¼ cup water
  • 3 Slices mozzarella cheese
  • Chopped parsley

Directions:

    For the Chicken:

  1. Season each side of chicken breast with salt and pepper.
  2. Heat a large nonstick skillet over medium high heat with the olive oil. Add the chicken to the skillet and cook for about 3-5 minutes per side or until the chicken is completely cooked through, set aside.
  3. For the Sauce:

  4. Preheat the oven on the broiler setting.
  5. Add the onions to the oil remaining in the pan. Sauté the onion for 2-3 minutes until the soften, add the garlic and let cook for 30 seconds. Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil, and pesto and stir to combine.
  6. When the sauce reaches a simmer, add a ¼ cup of water, lower the heat, cover and allow to simmer for 10-12 minutes or until the sauce thickens a bit.
  7. Add chicken back to pan with sauce and use a spoon to cover the chicken with the sauce.
  8. Top each breast with a slice of cheese.
  9. Place under the broiler for 1-2 minutes or until the cheese gets nice and bubbly and just melts.
  10. Top with parsley.
