Amaretto Mini Bundt Cakes

Sometimes recipes can make you feel fancy by their name. For instance, crème brûlée.

This recipe adds a hint of class to the normal bundt cake, which if we’re being honest is a very good thing. Bundt cake doesn’t roll off the tongue quite so smooth.

Ingredients

  • 1/2 Cup + 2 Tbsp Butter, softened
  • 1 1/2 oz Cream Cheese, softened
  • 1 1/4 Cups Sugar
  • 2 Tbsp Almond Liqueur
  • 1/2 Tbsp Vanilla Extract
  • 1 1/4 Cups All-Purpose Flour
  • 3 Large Eggs
  • 1/4 Cup Sliced Almonds

Amaretto Glaze

  • 1/2 Cup Sugar
  • 3 Tbsp Butter
  • 1/4 Cup Almond Liqueur
  • 1 Tbsp Water

Instructions

  1. Preheat oven to 325°F / 170°C.
  2. Beat butter and cream cheese with hand mixer until creamy.
  3. Gradually add sugar, beating until light and fluffy.
  4. Add liqueur and vanilla, beating just until blended.
  5. Gradually add flour to butter mixture, beat after each addition until blended.
  6. Add 1 egg at a time, beating until well blended.
  7. Grease each mini bundt pan with non-stick cooking spray then lightly flour.
  8. Sprinkle almonds inside each mini bundt pan.
  9. Pour batter into pans halfway full.
  10. Bake for 55 to 65 minutes or until a knife inserted comes out clean.
  11. During last 10 minutes of baking, prepare Amaretto Glaze.
  12. Remove cake from oven and let cool for 30 minutes.
  13. Press a plate on top of each cake and flip over then set on flat surface.
  14. Lift mini bundt pan up from the plate to remove each cake, which should stay on the plate.
  15. Gradually spoon all the hot Amaretto Glaze over the top of the cakes.
  16. Sprinkle sliced almonds or other desired topping on top to garnish.

Amaretto Glaze

  1. Bring sugar, butter, almond liqueur and water to a boil in a small saucepan over medium heat.
  2. Stir often.
  3. Reduce heat to medium-low and boil, stirring constantly for about 3 minutes.
  4. Remove from heat and pour over cakes immediately.

Notes

  • The batter will rise so it’s important not to overfill the bundt cake pan or else you’ll have a mess in the oven to clean up afterward.
  • Wait for the Amaretto glaze to soak into the cake after each spoonful.
